Carrot Pineapple Muffins

I grew up loving these Carrot Pineapple Muffins. I have such fond memories of coming home from school to the cinnamon smell of these moist muffins.

Yes. I said moist. These muffins are delicious.

Carrot Pineapple Muffins

4 eggs

1 1/2 cup white sugar

1 tsp salt

1 1/3 cup of oil

2 tsp vanilla

1 cup crushed pineapple with juice

2 tsp cinnamon

2 tsp baking powder

2 tsp baking soda

3 cup white flour

2 cup grated carrots

Beat eggs and sugar.

Add everything else with grated carrots joining batter last.

Grease or Spray muffin tins and bake at 350f for 17 minutes.

Do not overcook.

I overcooked these ones a tad because my kids like them this way. I don’t. I like them sticky and moist.

Yup. I said it again.
