My absolutely favourite muffins to make are pumpkin chip or carrot pineapple. It gives me wonderful memories of my childhood. There is nothing weird about this recipe except that I had to kill some jack o’lanterns in order to make the pumpkin chip muffins. Whoopsie. If you can handle the sacrifice of your cute little jack o’lantern then you will be just fine. I prefer to use fresh pumpkin. I love to boil it and freeze it and keep it hand for this recips as well as my most favourite curry pumpkin soup recipe.
Pumpkin Chip Muffins
4 eggs
1 1/2 cup white sugar
1 cup of oil (I use canola)
3 cups of solid packed pumpkin
3 cups flour
2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
dash of salt
1 cup of milk chocolate chips
Beat eggs, sugar, pumpkin and oil until smooth.
Mix flour, baking soda, baking powder, cinnamon, nutmeg and salt. Gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Grease muffin tins or use paper liners.
Bake at 400 f around 16 minutes. Use a toothpick or knife to see if fully cooked. Make sure you let sit in the muffin tins for at least 10 minutes before removing pumpkin chip muffins.
