Sweet Curry Chicken
3 Tbsp liquid honey
1 Tbsp Dijon Mustard
1 tsp margarine or butter
1 tsp curry powder
1 clove garlic, minced
8 chicken thigh
In a small bowl, stir all ingredients. Warm up for 30 seconds in microwave. Pour over chicken. Cover with foil. Bake for 20 minutes at 375 F. Remove foil. Bake for another 20 minutes. Place remaining sauce into a small pot and boil for a few minutes until it thickens. DO NOT MISS THIS STEP. Pour over chicken and serve. We like it with rice.
